To parse the data from the emails users within your org receive, you have to enable the Email parsing tool, configure the objects and create the context users. Each of the latter will have the dedicated email box, that will have the emails received converted to suggested records for the creation.
note: only recipients of those emails will have the visibility of the Record request sets created. You as the admin of the org, will be able to see those records, but won’t be able to validate them - only owners of the records (context user receiving the email) can do so.
To find the dedicated email addresses of your context users, you can either open Email Service tab in Salesforce Setup, or use the dedicated Email Addresses tab on Harvest Admin Console.

Repeat for each user you want to configure the Record request sets creation from predefined emails.
note: you may have all emails users receive converted to the records within your Salesforce (no predefined emails to be added). However, this approach is not recommended as it may lead to extreme tokens consumption. Remember, that every email converted uses certain amount of tokens.
